This recipe is so easy, I thought I'd just make a quick snack and not bother bringing out my camera. I was so wrong. It's so delicious, my iPhone photo doesn't do it justice.
1 can of black beans, drained, rinsed
1/2 cilantro leaves
1/4 cup of salsa
1/4 cup of plain Greek yogurt
1/2 teaspoon ground cumin (or sub with chili powder)
1/2 teaspoon sea salt
1 clove of garlic, minced
Put in a mini food processor and pulse until smooth. I served with organic blue corn tortillas, or serve on your next taco night. SO GOOD!
